Full Circle Flavour: Introducing Our Exclusive Penderyn Distillery Collaboration

At Dog’s Window Brewery, we are always looking for ways to push the boundaries of flavour, and sometimes, the best way to do that is to share a few barrels with some good friends.

We are incredibly proud to announce our latest project: a unique, two-part barrel-exchange collaboration with the world-renowned Penderyn Distillery. This project celebrates the beautiful synergy between craft brewing and fine distilling, resulting in two phenomenal new Imperial Stouts and setting the stage for a very special future whisky release.

The Base: Imperial Stout

Every great barrel-aged project needs a robust foundation. We started by brewing a complex, velvety Imperial Stout built on a rich malt bill of dark crystal, chocolate malts, and roasted barley. To give it a distinctly deep, rum-like sweetness, we added a generous dose of Dark Muscovado sugar.

Fermented with a blend of English yeast and balanced with traditional British East Kent Goldings and Fuggles hops, the un-aged version of called Neighbourhood Watch, is a profoundly dark, roasty, and layered experience right out of the tank.

The Barrels: Brandy & Oloroso Blood Tubs

Here is where the magic truly happens. We took a portion of this decadent Muscovado stout and laid it to rest in empty Brandy and Oloroso Sherry “blood tubs” sourced directly from Penderyn.

Blood tubs are smaller-than-average casks holding 40 liters. Because of their small size, they offer a massive wood-to-liquid ratio, allowing the beer to rapidly extract intense flavours from the oak. The Brandy casks impart warming notes of steeped dark fruits and toasted oak, while the Oloroso casks add sophisticated layers of roasted walnuts, dried figs, and a touch of leather.

The Future: A Limited-Edition Penderyn Whisky

The journey of these barrels doesn’t end with our stout! In the true spirit of collaboration, once we emptied these flavour-soaked blood tubs, we immediately sent them back to Penderyn Distillery.

They will be using these exact stout-seasoned Brandy and Oloroso casks to finish a highly anticipated, limited-edition run of Penderyn Whisky. The residual rich, roasty, and molasses notes from our Imperial Stout will weave their way into the final whisky profile, completing a beautiful cycle of flavour.
